SPELT HARVEST
IN SOUTHERN BELGIUM

image_edited.png

Why spelt?

Spelt is an heirloom grain that originated in the Near East over 8,000 years ago. Spelt has remained unchanged and has never been hybridized like modern wheat. It retains many of its original characteristics from antiquity, including its complex flavor and whole grain nutrition.

It is the world's primal grain, is historically rooted in the region where we distil our vodka and thus always in stock. Naturally it has more protein and less fat than other grains

1.

Most importantly: we do not import our base grains.

All spelt grains beeing used is from the closest as possible to our distillery.

Spelt has always been grown in our home region and fascinated us.

2.

We knew from our experiments with spelt that it has this rich flavour, other than modern wheat or barley. First time we distilled it, it translated in a full bodied, rich textured vodka with a nutty flavour.

BAM there you have our signature.

3.

Although we only use 42% of spelt in our vodka (because of shortages), this is quiet enough to give pH its unique character and to give spelt a podium once again.

All processes take place in our family distillery in Aalst, Belgium.

Our grains and natural sour water form the base of this vodka and come from Belgium as well. Let's say it is a vodka sourced and distilled in Belgium.
